How Do You Jar Tomatoes (Salsa) and Jalapeno Peppers?
OK I know I can Google this question and/or search this forum but I want to tailor this question to my circumstance and situation. I have a LOT of garden fresh tomatoes and Jalapeno peppers. Anyway I love hot sauce so I want to make a big batch and jar it. I will buy a case of Mason jars at the store and use them. Thing is I have nothing fancy like vacuum sealers or anything so I will be needing to do this old fashioned style. Anyway, how do you go about jarring the food for long term storage, months not years or anything crazy. Also, Id like to stew up some tomatoes as well and jar them too. And if I do the Jalapenos by themselves in jars what liquid should I put with them, some vinegar and carrots? So if anyone will explain to me how to do this step by step, Id be much obliged. Thanks for any and all help!

Buy the Ball Blue book and follow the directions exactly on timing and preparing for safety purposes. Botulism sucks.

What you are referring to is "canning".
It an be done with a pressure cooker or a large pot of boiling water. The pot must be deep enough that the water will cover the top of the jars when they are standing upright. We put jar rings in the bottom of the pot so that the jars don't sit directly on the bottom of the pot. We canned homemade salsa and it was great but it is a PITA to chop up sufficient amounts of onion, peppers, tomatoes etc. |
